When picked they are a ripe green but left to dry they turn a\nleathery brown. The seeds also dry out and harden so when shaken can produce a\ngentle percussive tone. FUN FACT! The beans from a Pacay tree are also known\nas the ‘ice cream bean’ which have a sweet and refreshing taste just like an\nice cream, hence the name. In Central America these beans are cooked and\nserved much like any other bean, and in Mexico they are roasted and served as\nsnacks.
